What the deep clean covers
The full cook line, including the gaps that never get pulled apart. Hood filters removed, degreased, and refitted. The overhead run over the line, nearly always overdue. Stainless restored with the grain. Floors taken down beneath and behind equipment and into the grout. Drains and floor sinks cleared, the usual home of a lingering odor. Walk-in shelving, gaskets, and seals when they belong on the list.
