Where the work goes
The cook line front to back, including the gaps between units that never get pulled out. Hood filters lifted, degreased, and reset. The overhead zone above the line, nearly always overdue. Stainless brought back with the grain. Floors taken down under and behind equipment and into the grout, with drains and floor sinks cleared where a lingering smell usually starts.
